Take 2 Albert Bartlett Original Rooster potatoes and very thinly slice with a mandolin.
Rinse in cold water then change the water and soak for 15 minutes before rinsing again. This helps to remove some of the starch from the potatoes. Lay them out on some kitchen roll with more on top to get them dry.
Put them in a bowl, drizzle over a touch of cooking oil and some of your favourite seasoning – we went for a nice herby chicken seasoning with these. Mix well then layer in to the air fryer, overlapping slightly but still on a single layer in each drawer
Air fry on 180 for 8 minutes or until nice and golden and crispy. Give them a toss and mix up half way through the cook to ensure they crisp up evenly.
Once cooked, tip in to a bowl, finish with a tiny bit more seasoning and enjoy!
