Baked Apache Potatoes with Spicy Cajun Chicken

Sally Bee cooks up a simple and delicious dish with a kick

Cooking PotMETHOD

  1. Preheat the oven to 200 °C / Gas mark 6.

  2. Mix together equal measures of the cayenne pepper, garlic powder, smoked paprika and black pepper (this makes a perfect low salt Cajun spice mix!)

  3. Rinse the Apache Potatoes in a little water and then pop the washed potatoes on to a baking tray and bake for 15 minutes until cooked through.

  4. Meanwhile, cut the chicken breast into strips and place in a small non-stick frying pan along with a drizzle of oil and a sprinkle of the Cajun spice mix.

  5. Fry the chicken off until is is thoroughly cooked through and crispy.

  6. Serve the chicken on top of the baked Apache Potatoes, add a dollop of crème fraîche and a large colourful salad on the side.

  7. Sprinkle with a little mint too, if you like. And enjoy!

600g Albert Bartlett Apache Potatoes
3 or 4 large chicken breasts
120g crème fraîche
Smoked paprika
Cayenne pepper
Garlic powder
Black pepper
Olive oil
Salad (to garnish)
