BBQ Jersey Royals Served with Grilled Chicken and Asparagus

Jersey Royals are a summer staple. They are perfect in various dishes whether that’s a salad, served with fish, for a BBQ or even just on their own. Their delicious nutty flavour and smooth, waxy texture have made the Jersey Royal a national favourite for over 145 years.

Cooking PotMETHOD

  1. Set your BBQ up for 2 zone cooking so you have a high heat zone and a safety zone. Aim for a temperature of around 210c.

  2. Season the chicken with a little bit of oil and your favourite BBQ rub or chicken seasoning. Salt & pepper, a dash of paprika and some chilli flakes work well.

  3. Grill the chicken over the high heat zone until you have some nice colour on the skin then move over to the indirect side, place your lid down and cook until the internal temperature reaches 80c.

  4. Meanwhile, wash and then boil the Jersey Royals until fork tender then drain well and allow to steam dry.

  5. Lightly oil and season the asparagus and grill over the direct side of the BBQ.

  6. Add a pan with some oil to the hot side and once the oil is hot, pour in the potatoes.

  7. Season with flaky sea salt & cracked black pepper and cook until you get a nice char on the skin of the potatoes.

  8. Remove, serve & enjoy!
