BBQ Potato Sliders

A potato... as a burger bun? The possibilities are delicious with these BBQ sliders!

Cooking PotMETHOD

  1. Light the fire on you BBQ and get that wood and charcoal burning hot, you need there to be plenty of hot embers and coals (much like pre heating an oven.

  2. Finely dice the onion, then add to the mince in a bow, along with 3 generous pinches of salt and pepper and mix with by hand, trying not to over work the meat or it will be too chewy in the end.

  3. Once mixed, roll the mixture into roughly 6 balls and flatten them out in the palm of your hand, these should only be 1 cm thick puck sizes and fit in the palm of your hand.

  4. Next take your potatoes and microwave them all for 5 minutes in a bowl. Once done add a big squirt of oil, a generous pinch of salt, pepper and smoked paprika, and mix through well until all the potatoes are evenly coated, then individually wrap each potato in tin foil.

  5. Place your potatoes direcly onto the coals in the BBQ and cook for about 20 minutes - once cooked they should be crispy on the outside and soft on the inside.

  6. While potatoes are cooking, add your burgers and bacon to the grill part of the BBQ (put some kindling on the hot coals to get a flame), this will flame grill the burgers and bacon to give the best cooking and flavour. Make sure you flip when the flames start to touch them.

  7. Once cooked, carefully remove the potatoes from the BBQ, removing from the foil and slice off a small slice at the side of each so it will stand freely and not wobble. Then slice the potatoes in half.

  8. Once the bacon is cooked, remove and set aside. When the burgers are cooked on either side, add the cheese and cook for a further few minutes until the cheese had melted.

  9. To construct your slides, take each half of potato with the flat side and add a burger tomato, a dollop of salsa, 1 bacon rasher, some mustard and a handful rocket, top with the other half of the potato and there you have it!

6 Medium Albert Bartlett Original Rooster Potatoes
500g Minced Meat (12-20% fat, more fat means juicer burgers!)
1 medium onion
Salt
Pepper
Smoked Paprika
Oil
6 Smoked streaky bacon rashers
6 Cheese slices of your choice (we used edam)
Salsa
Honey mustard
Handful of Rocket
1 Tomato evenly cut into 6 slices
