Buffalo Chicken Potato Pops

Albert Bartlett Mashed Potatoes with a Buffalo Chicken filling to make these melt in your mouth air fried potato pops!

Cooking PotMETHOD

  1. Add the mashed potatoes and cornflour to a bowl, combine with a fork or masher.

  2. In a separate bowl, add all of the ingredients for the filling and mix well. Set aside.

  3. Take half a tablespoon of mashed potato and form a ball, flatten it into a disc shape and add half a teaspoon of the buffalo chicken mixture in the middle. Fold in to cover and gently roll into a ball. Repeat.

  4. Set your air fryer to 200c for 15 minutes. Add the potato pops to the tray and spray generously with oil. Turn half way through the cooking time. Once the cooking cycle is complete, remove and serve!

  5. Enjoy!

400g Albert Bartlett Mashed Potatoes
2 tbsp Cornflour

For the filling -
100g Pre cooked chicken, finely chopped or shredded
2 tbsp Buffalo sauce
1 tbsp Light Mayonnaise
50g Grated cheese
1 Spring onion, finely chopped
