Follow the basic wedge recipe.
Gently heat some oil in a frying pan, then add in the onions and cook gently on the lowest setting for around 30 minutes, or until caramelised.
When wedges are cooked, sprinkle with the onion, cheese, pine nuts and thyme, then pop back in the oven for 15 minutes.
