Wash the Albert Bartlett Potatoes.
Pierce the potatoes all over with a sharp knife.
Microwave the potatoes on high for 5 minutes, then brush with oil and season with a good pinch of salt.
Air fry or oven-cook on 200C for 15 minutes.
While the potatoes are cooking, slice your chicken, season with salt and pepper and fry for 4-5 minutes.
Add fajita seasoning and tomato puree to the chicken and mix in well.
Fry for a further few minutes until the chicken is cooked.
Once your potatoes are cooked, cut a cross on top of each, and open out the potato in order to fit the filling.
Finally, fill with some butter, chicken fajita, and sprinkle with grated cheese to finish.
