Jerk Chicken with Green Salad and Baked Potatoes

Jerk chicken served with green salad and baked Original Rooster potatoes.

Cooking PotMETHOD

  1. Mix all the ingredients, apart from potatoes, in a food processor to make a paste.

  2. Marinate your chosen meat for up to two hours before cooking.

  3. Preheat oven to 220 °C / Gas Mark 7.

  4. Prick potatoes with a fork and place directly on to oven shelf and bake for 60 - 80 minutes.

  5. Once the potatoes and meat have finished cooking, serve both with green salad and a dollop of low fat crème fraiche.

2-3 large sized Albert Bartlett Original Rooster Potatoes
5 spring onions
5 sprigs fresh thyme
1/2 tsp black pepper
1 tbsp soft brown sugar
2 tbsp runny honey
2 tsp ground allspice
1 tsp ground nutmeg
1 tsp ground cinnamon
2 deseeded scotch bonnet peppers
4 tbsp soy sauce
2 tbsp extra virgin olive oil
4 tbsp cider vinegar
1 onion
1/2 cup orange juice
2 cloves garlic (peeled)
2cm fresh ginger (peeled)
