Preheat your oven to gas mark 6 / 200 degrees C.
Wash and dry your potato, then using a sharp knife slice vertically down the potato, cutting very thin slices all the way through.
Place the wrap on a baking tray and cover in your thin slices of potato.
Sprinkle your mozzarella and dried rosemary on.
Place in the oven and bake for 30 mins.
