Preheat oven to 180 degrees Celsius and line a baking tray with greaseproof paper.
While the oven is preheating, wash, peel, boil and mash your potatoes - the weight should be based on the weight of mashed potato. Ensure to keep the potatoes plain with no butter, seasoning or milk. Set aside once done.
Melt butter and chocolate in saucepan until smooth. Let cool for 15 mins. Stir in sugar, eggs, vanilla and salt. Stir in mashed potatoes until smooth.
Add flour and stir to combine. Pour into prepared baking pan.
Sprinkle with chocolate chips. Bake until brownies feel firm when lightly touched, about 20
mins. Let cool. Cut into squares and serve.
