Place your potato in an oven at 200c after rubbing it with a little oil, salt and pepper. Bake for an hour and ten minutes (or until soft in the middle).
Add salt and pepper to the mince. Roll the mince and make it into a patty.
Heat a pan with some oil. When really hot, put the burger in the pan and cook for a couple of minute before flipping. When flipped, add the cheese slices to the top of it to melt. Take out of pan when done.
Slice the potato in half using a sharp knife. Gently mash up the potato using a fork, but not too much. Add a little butter, salt and pepper.
Spread each side of the potato flesh with the burger sauce, followed by gherkin and lettuce. Add the cheesy patty and put the top on.

Burger sauce (or make your own using 2 tbsp light mayo, tbsp American mustard, tbsp tomato sauce, a dollop of smooth pickle, bit of salt and pepper, diced gherkin).
