Preheat oven to 200C.
Wash potatoes then cut each into 8 large wedges.
Transfer to a bowl with cajun seasoning, dried oregano, pinch of sea salt and olive oil. Stir to evenly coat the potatoes.
Place onto a baking tray and cook for 50-60 minutes until golden and cooked through.
Serve and enjoy!
