Seasonal Roast

This delicious seasonal roast incorporates a variety of fresh ingredients and is sure to be a hit at your next dinner party!

Cooking PotMETHOD

  1. Pre-heat oven on 180c.

  2. Place chicken breast side down and cut down both sides of the spine to spatchcock the chicken.

  3. Rub in half of the seasoning mix along with the jerk marinade until the chicken is fully coated and set aside.

  4. Wash and peal your Albert Bartlett Seasonal Vegetables and Albert Bartlett Potatoes, before cutting it into medium size chunks.

  5. Place your potatoes in a shallow dish or roasting tray. Add the remaining seasoning and jerk marinade to vegetables.

  6. Place chicken on top of the vegetable and roast in the oven uncovered for 30 minutes.

  7. Remove dish from the oven, using a lid or foil cover dish. Place the dish back in the oven and cook for 45 minutes. (*Base chicken 2-3 times throughout cooking process.)

  8. Lastly remove the lid from dish and cook uncovered for a further 15 minutes or until chicken has cooked through.

  9. Serve and enjoy!

1/2 Albert Bartlett Seasonal Vegetable Pack
1/4 pack Albert Bartlett Potatoes of choice
1 small whole chicken
1 tablespoon shop bought jerk marinade (+ extra for the potatoes)

Seasoning mix
1 tbsp All-purpose seasoning (or seasoning salt of choice)
1 Chicken stock cube
1/2 Tbsp Ginger powder
1/2 Tbsp Smoked paprika
1 Tbsp Garlic granules
1/2 Tbsp Mixed herb
1 Tbsp Brown sugar
