Preheat the oven to 225°C or Gas mark 7.
Place a roasting tray into the oven and leave until tray is very hot.
Then pour the oil into the tray and then arrange the potatoes in a single layer. Pop the tray back into the oven and roast the potatoes until golden, turning once or twice.
During the last 5 minutes of cooking, sprinkle the spices over the chips.
Remove the potatoes from the oven, sprinkle with sea salt.
Serve and enjoy.
Delicious served with garlic mayonnaise or your favourite dip.
