To prepare your mashed potatoes, follow our easy recipe for delicious Rooster Mashed Potatoes
In a large bowl combine the mash, honey, cocoa powder, and the vanilla essence and mix well, until the mash is silky smooth and chocolaty coloured.
Taste to make sure it's sweet enough for your liking. Add a dash more honey if not.
Line a baking tray (that will fit into your freezer) with grease-proof paper.
Using 2 teaspoons take small truffle sized dots of mash and gently roll into balls with your hands. Laying them out on the lined baking tray.
Pop the tray in the freezer for 15 minutes to firm up your truffles.
To decorate roll each ball in melted chocolate and then in a decoration of your choice.
The truffles will keep for 3-4 days like this if stored in an airtight tub in a cool place.

Toasted Crushed Hazelnuts
Desiccated Coconut
Hundreds and Thousands
Gold Leaf or Edible Glitter
