Bonfire Potatoes

Are you bored of your usual baked potatoes? Then grab yourself some Albert Bartlett Bakers or Butter Golds and load them up! Bacon, chorizo, nachos, jalapenos, grab whatever you have and get creative.

Cooking PotMETHOD

  1. Preheat your oven or BBQ to 210c. Meanwhile, grab the Albert Bartlett Potatoes, and give them a good scrub to clean off any dirt. Pat them dry with a kitchen towel.

  2. Once your spuds are clean, prick them all over with a fork, rub with a little oil and season well with salt & pepper.

  3. Place the potatoes directly on the oven rack and let them bake for about 45-60 minutes. They're ready when a fork easily pierces through the skin, and the insides are fluffy perfection.

  4. While the potatoes are baking, cook your bacon until crispy and your chorizo until it’s sizzling and golden.

  5. When the potatoes are done, remove them from the oven, let cool slightly then slice in half.

  6. Scoop out the potato and mix with butter, sour cream, cheese, and season with salt & pepper.

  7. Add the potato mixture back in to the potato skins then finish with the toppings of your choice, get creative!

  8. Finally, pop them back into the oven for around 20 minutes until the cheese is bubbly and golden.

  9. Remove, let cool slightly then serve and enjoy!
