Cook the Cornish potatoes in boiling water until just cooked then drain and keep warm.
Heat the butter in a large saucepan, add the chopped smoke bacon and fry for 2-3 minutes until golden and crispy.
Add the crushed garlic and fry for a further minute then add the sage and lemon zest.
Add the cooked potatoes and cook for 2 minutes until they begin to colour then season to taste and serve.
These are a great alternative to roast potatoes.

50g Salted butter
125g smoked streaky bacon (cut into lardons)
1 crushed clove of garlic
Zest of 1 lemon
1 bunch of sage (shredded)
