Finger Chilli, Honey & Lime Accordion Potatoes

Based on the infamous tik tok potato recipe - with an added twist!

Cooking PotMETHOD

  1. Preheat oven 200C. Have a roasting tin ready.

  2. Set up a chopping board and two chopsticks. Take each potato and slice into 1.5cm thick discs along its length and place the chopsticks parallel to a disc, flanking each side. Slice the potatoes at 5mm intervals horizontally, stopping when the knife reaches the chopsticks, so you are not cutting down to the base.

  3. Turn the potato over, reset the chopsticks and cut at the same intervals, this time diagonally. When you pull the potato, it should separate like an Accordion.

  4. Repeat for all the potatoes and lay in the roasting tin, spaced apart. Drizzle with the rapeseed oil, taking care to fill the gaps.

  5. Roast for 25 minutes. Meanwhile, mix the chilli with the honey and lime juice in a small bowl. After 25 minutes, drizzle over the potatoes and cook 5 minutes more or until golden and sticky.

  6. Remove, sprinkle with feta and herbs and serve with extra lime for squeezing.

  7. Serve and enjoy!

1kg Albert Bartlett Original Rooster Potatoes
50ml Rapeseed Oil
2 Finger Chillies, finely chopped
3 tbsp Honey
1 tbsp Lime juice, plus lime wedges to serve
Flaky Salt to taste
100g Feta Crumbled
Fresh Herbs to garnish
