Begin by preheating the oven to 180c. In a bowl combine the olive oil with the garlic granules, onion granules, smoked paprika and a pinch of salt. Set to one side.
Next load the vegetables, potatoes and tofu chunks onto skewers and place them onto a large baking tray.
Coat the skewers in the marinade ensuring all sides are coated. Place in the oven for 25-30 minutes turning the skewers over halfway.
Serve with rice, salad and garnish with fresh chives should you wish. Enjoy!

1 block of smoked tofu (cut into blocks)
