Jersey Royal Tofu Skewers

A lighter, healthier option packed with flavour for those summer nights in the garden!

Cooking PotMETHOD

  1. Begin by preheating the oven to 180c. In a bowl combine the olive oil with the garlic granules, onion granules, smoked paprika and a pinch of salt. Set to one side.

  2. Next load the vegetables, potatoes and tofu chunks onto skewers and place them onto a large baking tray.

  3. Coat the skewers in the marinade ensuring all sides are coated. Place in the oven for 25-30 minutes turning the skewers over halfway.

  4. Serve with rice, salad and garnish with fresh chives should you wish. Enjoy!

1/2 pack of Albert Bartlett Jersey Royal Potatoes
1 block of smoked tofu (cut into blocks)
1 courgette (sliced)
1 red onion (cut into chunks)
1 red pepper (cut into chunks)
1 orange pepper (cut into chunks)
2 tbsp of extra virgin olive oil
1/2 tsp of garlic granules
1/2 tsp of onion granules
1/2 tsn of smoked paprika
Pinch of salt

To serve (optional):
Rice
Salad
Fresh chives to garnish
