Potato, Cheese and Bacon Pie

A cheesy pie that is head and (pork) shoulders above your average potluck fare.

Cooking PotMETHOD

  1. Preheat the oven to 425°F.

  2. Butter an ovenproof 9-inch baking dish and arrange the bacon onto the bottom and sides of the pan. Allow the bacon to slightly overhang the edge of the dish.

  3. Wash the sliced potatoes and dry in a towel.

  4. Arrange one-third of the potatoes onto the bacon and sprinkle with one-third of the cheese. Repeat, creating 2 additional layers of potatoes and cheese. Fold the overhanging bacon onto the potatoes.

  5. Bake uncovered for 50 minutes. Test if the potatoes are cooked by piercing them with a knife.

  6. Serve and enjoy for breakfast, lunch, dinner or anytime in between.

1/2 bag of Albert Bartlett Original Rooster Potatoes
2 tbsp melted butter
7 oz streaky bacon (thinly sliced)
4 oz grated gruyere cheese
Salt and pepper to taste
