Potato Waffle Burger

Take brunch to the next level with this loaded potato waffle burger!

Cooking PotMETHOD

  1. Peel all the potatoes and cut into quarters then, in a large saucepan, simmer the potatoes in boiling water, for 20 minutes.

  2. Whilst the potatoes are simmering, in a medium sized frying pan over a low-medium heat add butter, onions and garlic, until softened. Place to the side for later.

  3. Meanwhile prep the burgers, split the beef mince into 2 80g balls.

  4. Heat a large frying pan over a high heat with a drizzle of oil, once heated place 1 ball of mince into the frying pan and with the bottom of a clean mug press firmly down onto the mince to create a burger. Repeat with the remaining ball of mince. Cook for 2-3 mins per side or until thoroughly cooked.

  5. After 20mins check the potatoes are tender, drain the water through a colander. Put the drained potatoes back into the saucepan and mash well with a potato masher until there isn’t any large lumps. Spoon mash into a clean bowl to cool until at room temperature.

  6. Add the cheese to the top of your burgers whilst still in frying pan to allow the cheese to melt.

  7. Preheat your chosen waffle iron. Beat 2 large eggs, add to the mash and mix until combined. This is now your waffle batter.

  8. Once the waffle iron has heated, add your waffle batter to the iron and close. Cook the potato waffle for 10-15 mins or until golden.

  9. Meanwhile grill your bacon until crispy, and fry one large egg.

  10. Now all the ingredients are cooked, build your potato waffle burger. Start with one potato waffle, then the burgers, then bacon, then egg and top with another potato waffle.

600g Albert Bartlett Original Rooster Potatoes
70g Plain Flour
2 Lareg eggs
1 White onion
Handful of chopped chives
1 Clove of garlic

For the topping:
160g of 20% fat beef mince
4 Streaky bacon rashers
2-3 slices of cheese of your choice
1 egg
