Quick Cajun Chicken Salad served with Homemade Chips

A quick and healthy mealtime idea.

  1. Follow the recipe for healthy Original Rooster oven chips.

  2. Dust each of the chicken breast portions with the Cajun spices and leave to marinate in the fridge for 10 minutes.

  3. In a large, non-stick frying pan, drizzle a little olive oil and cook the chicken for 6-8 minutes on each side. Make sure the chicken is cooked all the way through.

  4. Set the chicken aside for a few minutes to rest while you arrange the salad.

  5. Use the Iceberg lettuce to make a ‘bowl’ for the rest of the salad.

  6. When ready to serve, slice the chicken portions through at a slant and pop on top of the salad.

  7. Serve with the oven chips on the side.

4 medium sized Albert Bartlett Original Rooster Potatoes
4 skinless chicken breast portions
2 tbsp Cajun spice mix
Drizzle extra virgin olive oil
Iceberg lettuce
Watercress
1 ripe avocado
1 red pepper
Sweet chilli sauce
