Salt & Pepper Jersey Royals

An in season twist on a guilty takeaway pleasure.

Cooking PotMETHOD

  1. Set the oven to 200C.

  2. Put the Jersey Royals into a large bowl and add 3 tbsp of vegetable oil and the crushed garlic. Transfer to an oven tray and roast until crisp, around 35/40 minutes.

  3. In a large pan, add 1 tbsp of oil and the Chinese 5 spice. Add the chopped onion, pepper, chilli and spring onion and gently cook until fragrant and soft.

  4. Add the cooked Jersey Royals to the pan and stir through.

  5. Season with a generous pinch of salt and stir through the chopped coriander & enjoy!

750g Albert Bartlett Jersey Royals
4 tbsp veg oil
2 cloves garlic, crushed
1 red pepper, diced
1 small white onion, cut into slices
1 chilli, deseeded and slices
3 spring onions, sliced
3/4 teaspoon Chinese 5 spice
Handful of fresh, chopped coriander for serving.
