Sri Lankan Inspired Devilled Chips

Cooking PotMETHOD

  1. Preheat fan oven to 200c. Scatter the Albert Bartlett Frozen Homestyle Chips onto a large or two smaller trays, and place in the oven for 20-25 minutes turning them halfway.

  2. After 10 minutes heat a large pan on a low-medium heat and add the vegetable oil.

  3. Once it’s hot add the sliced onion and cook down until soft and translucent.

  4. Next add the crushed garlic, curry leaves, 1 of the sliced red chillies, brown mustard seeds, ground turmeric, salt and a pinch of pepper.

  5. Combine and simmer for a few more minutes adding a splash of water to loosen.

  6. Once the chips are cooked carefully transfer to the pan and combine well in the onion and spices.

  7. Serve as a side dish, with an extra pinch of salt and the remaining ½ sliced red chilli.

  8. Enjoy!

1 bag (1.2kg) Albert Bartlett Frozen Homestyle Chips
3 tablespoons vegetable oil
1 white onion (halved and sliced)
3 garlic cloves (crushed)
10 curry leaves
1 ½ red chillies (thinly sliced)
1 ½ teaspoon brown mustard seeds
1 ½ teaspoons ground turmeric
½ teaspoon salt
Generous pinch of pepper
