Preheat fan oven to 200c. Scatter the Albert Bartlett Frozen Homestyle Chips onto a large or two smaller trays, and place in the oven for 20-25 minutes turning them halfway.
After 10 minutes heat a large pan on a low-medium heat and add the vegetable oil.
Once it’s hot add the sliced onion and cook down until soft and translucent.
Next add the crushed garlic, curry leaves, 1 of the sliced red chillies, brown mustard seeds, ground turmeric, salt and a pinch of pepper.
Combine and simmer for a few more minutes adding a splash of water to loosen.
Once the chips are cooked carefully transfer to the pan and combine well in the onion and spices.
Serve as a side dish, with an extra pinch of salt and the remaining ½ sliced red chilli.
