Cut the potatoes into bite size pieces and boil in unsalted water until coked through but retaining their shape. Set aside to cool.
In a large bowl, mix all the other ingredients, then add the slightly cooled potatoes, stir well to coat and serve.
Takes about 15 minutes, is extremely tasty and only uses 2 bowls. What’s not to love?!

500g of Jersey Royals or Cornish King Potatoes
Washed and thinly sliced radishes
1/2 of a cucumber (washed and thinly sliced)
Small handful of Chives (washed and chopped)
2 tbsp wholegrain mustard
200ml low fat crème fraiche
