Ultimate Flat Iron Steak with Rooster Homestyle Chips

Treat your family to the ultimate steak and chips, with caramelised onions, mushrooms, tomatoes, and of course our very own Rooster Homestyle Chips.

Cooking PotMETHOD

  1. First, pop the Homestyle Chips into a hot oven and bake until golden and crisp. Sprinkle with a little salt.

  2. Meanwhile, cook the flat iron steaks. Season the steaks with plenty of salt and pepper, then heat a little rapeseed oil in a thick-bottomed frying pan.

  3. Wait until the pan is very hot before adding the flat iron steaks, then let them cook for 2 minutes. Turn over the steaks and quickly add the butter, then leave for a further 2 minutes. Now remove the steaks from the pan and leave to rest for 5 minutes. You can return the steaks to the pan for a quick 1 minute either side before serving.

  4. Garnish with the watercress.

For the caramelised onions

  1. Peel the onions and cut in half through the root.

  2. Lay them centre side down in an ovenproof dish, season with salt and pepper and drizzle over the oil.

  3. Put the dish in a hot oven (heated to 180°C) for 15 minutes. Turn them over and leave for a further 10 minutes, until the onions are golden and caramelised.

  4. Drain on kitchen towel before serving.

  5. For the sautéed mushrooms and tomatoes

    Cut the mushrooms and tomatoes in half.

  6. When you take the steaks out of the pan, simply pop in the mushroom and tomato halves and sauté for 2 minutes. Then add the butter and cook for a further 2 minutes until golden.

  7. Drain on kitchen towel before serving.

600g Albert Bartlett Homestyle Chips
4 6oz flat iron steaks (or rib-eye)
20ml extra virgin rapeseed oil
20g butter
20g watercress
2 white onions
2 large cherry tomatoes on the vine
