Peel and cut your Butter Gold potatoes in half, ready for boiling.
Add the potatoes to boiling water and cook for around 15 minutes or until tender.
Whilst the potatoes are boiling, finely chop the onion and pepper and add to the olive oil.
Add the oregano to the mixture and drizzle over the potatoes once cooked.
Garnish with the flat leaf parsley to taste.

1/4 red onion
100ml olive oil
flat leaf parsley as required
