Fry the onions, red pepper and garlic in the butter and olive oil for 3-4 minutes until soft.
Add the sliced Jersey Royal potatoes to the frying pan and cook for a further 2-3 minutes.
Meanwhile, crack the eggs, add to a bowl and whisk together until thoroughly mixed.
Add the spinach to the pan for a minute, then pour over the egg mixture, turn the heat down to low and leave for around twelve minutes until cooked through.

Small amount of butter
Freshly minced garlic
