Jersey Royal Tortilla

A taste of summer- perfection!

Cooking PotMETHOD

  1. Fry the onions, red pepper and garlic in the butter and olive oil for 3-4 minutes until soft.

  2. Add the sliced Jersey Royal potatoes to the frying pan and cook for a further 2-3 minutes.

  3. Meanwhile, crack the eggs, add to a bowl and whisk together until thoroughly mixed.

  4. Add the spinach to the pan for a minute, then pour over the egg mixture, turn the heat down to low and leave for around twelve minutes until cooked through.

1 pack of Jersey Royal Potatoes (par boiled)
1/2 red pepper (thinly sliced)
1 onion (thinly sliced)
Handful of fresh spinach
Small amount of butter
Freshly minced garlic
Drizzle of olive oil
